FOOD BABY IN MY BELLY!

I ate too much food today. I had the best of intentions when I woke up this morning, but then breakfast manifested itself into this:Olympic organic green tea and vanilla yogurt, 6 water crackers with 1 slice of prosciutto, half a whole wheat English muffin with PB and coconut butter and 3 strawberries, plus a small glass of OJ, unpictured. Breakfast overload! But it was all rather small-portioned stuff and totally worth it!

I wasn't going to eat my usual second breakfast oatmeal but I knew that skipping out on food for a full five hours was not going to be fun. I struggled with the idea of eating oatmeal with chia seeds and ground flax yet again (I actually really hate oatmeal despite eating it every.freaking.day) so I decided to add two squares of Lindt's Sea Salt dark chocolate to my oatmeal this morning. I added it just after adding the boiling water and it melted into a wonderful brown gunk. It smelled yummy! Then I added strawberries and grapes:Tastebuds satisfied? Check. Stomach satisfied for four hours? Double-check!

Lunch was equally delicious:A salad of mixed greens, beans (my dad says they're kidney beans but I don't think they are because they're really light in colour), strawberries and 1/4 salmon filet). I made the mistake of packing this all together instead of packing the beans and salmon separately. I knew I was going to heat the salmon and beans in the microwave before consuming at lunch time so of course, the strawberries and greens were a little mushy upon consumption. It was okay...still delicious, tastebuds rocked!

Snacks included the rest of my grapes and strawberries:And perhaps 2/3 of the following brownies:
Despite hating walnuts in their natural form, I adore walnuts in brownies. Yum!

Came home from work and immediately decided to enjoy leftover orzo with light red kidney beans:Maybe times two--oops! Quite some time after that I had a small bowl of broccoli and mushrooms and then a pickle. It was too much food. Belly is currently not happy with me--double oops!

MEGA-QUICK POST-A-RAMA

I have to get this post done quick, as in, like yesterday. I have to finish eating dinner, change my clothes, change the cat litters (all four!) and make a final grocery list for Whole Foods before Sean picks me up so we can head to--you guessed it--Whole Foods...but also to the Vivian Girls concert in Toronto. Yay, I'm excited! The Vivian Girls and Whole Foods in one evening!!!! I am currently catching up on my fave food blogs and the most recent episode of Gossip Girl while I eat dinner and blog. I know, I know, horrible habits for dining, but I have no choice tonight.

Food from yesterday includes two soft-boiled eggs and two slices of whole wheat toast (one with natural, organic PB) for first breakfast.Second breakfast was the following minus one of the granola bars because I forgot my instant oatmeal at home. The game plan was to consume as much food as possible in 30 minutes so that I wouldn't want to eat my arm or eat a sample within the four hours before my lunch break. Mission was only 50% accomplished because while I didn't eat any samples, I really did want to eat my arm by the time lunch rolled around. I tried to eat the following as "properly" as I could.Organic chicken drumstick that I coated in dijon mustard and then coated with breadcrumbs that I seasoned with parmesan cheese, garlic powder and thyme. Delicious! Oh and cucumber sticks and mini carrots. And I also ate a salad:Spring mix with some spinach as well as cucumber slices, radish slices, strawberries and goat cheese. No dressing, which was a bit of a shame because there was not enough goat cheese or strawberries to hold everything together. I'm trying to cut down on my goat cheese intake simply because it causes too much lactose intolerance-related pain.

Dinner yesterday was probably downright sad because I just can't remember it! Oh wells.

10th...Today! (Wednesday)
Happy Hump Day! I figure that I should probably say that on at least one Wednesday on my blog. Last night I had been lamenting to Sean about how much McDonalds I have consumed since the beginning of the year. It's not usually my thing to eat McDonalds. I'd much rather have a homemade burger from Famous Sam's but sometimes McDonalds French fries are the way to go--even though they can be hit or miss.

Aaaanyway, having been out late the night before and having to get up in the morning to shower, make the second part of my lunch for today, I wasn't really in the mood or did I have the time to make myself first breakfast so I asked my dad if we could stop by Tim Hortons to grab a breakfasts sandwich and also to partake in their free hashbrown promo. Unfortunately, by the time we booked it, it was a little too late to head in the direction of Tims and we had to stop by McD's instead. Oops! So I ended up having a bacon and egg McMuffin with a hashbrown. But for reals, I need to stop eating McDonalds!!

Here I am finishing off my breakfast while yes, reading In Defense of Food. Oh dear...irony! Please don't be mad Michael Pollan. I normally do eat food. Mostly plants. First breakfast was followed up by a mug of oatmeal, with the usual, chia seed and ground flax. Sadly no awesome additions like fruit, fresh or otherwise.

Lunch was awesome, due to some masterful in-advance cooking.
Does this chicken drumstick look familiar? No, it's not the same one as the day before...I just happened to cook three on Monday night for subsequent lunches. So yeah, there's one more photo to be seen. Along with the chicken and mini carrots, I had the following ricotta and spinach ravioli with 365 Everyday (Whole Foods brand) tomato sauce...10 of them to be exact. Pretty tasty. The sauce is good. It's not too salty or spicy. It was a good mix with what I think is usually bland ravioli. No time for veggie add-ins this time around. This pear was on the menu but I ran out of time to eat it.This is what I am currently eating for dinner--though I probably should not be. Half of tonight's dinner are IBS-triggers but I don't dare step out of the house without eating something because Sean and I would probably end up in the drive-thru at McDonald's.So instead I'm having basmati rice with brussel sprouts, beef and onions and cabbage. Oi. The greens are the IBS-triggers. I already know that tomorrow will not be pleasant.

I'M HOW OLD NOW?

27. Yikes! While some 27 year olds I know are living on their own or with their significant others or married and/or have children, I am none of these things. Does it bother me? Sometimes, but then I look at the course my life has taken and figure that where I'm at right now is probably where I should be. 27 does seem kind of old though. I'm on the wrong side of my 20s. I wish I was 25 again. I can't even begin to tell you the amount of times I said that when I was 26. I'm trying to change that though.

With the beginning of the new year I decided to make a change for the better. Putting an end to my beyond shitty job was first on the agenda. Second on the agenda was getting a new job and thankfully that was accomplished--though I did go through a period of feeling totally and utterly sorry for myself because I couldn't find a job within two weeks. What can I say...sometimes I have delusions of grandeur--or as Sean would tell you, they occur often.

Anyway, this year I want to read more and have decided to delve into two books I read when I was in elementary and high school: The Giver and The Chrysalids. They were both books I enjoyed during elementary school but the former was my absolute fave. The latter, with its sci-fi theme, is one that I think Sean will really enjoy so he's going to read it after I read it and finally he'll have someone to discuss a book with.

Later this year I want to start running. Or maybe jogging. Or just walking. I have no idea how my asthma is going to effect my running, or even the possibility of me running, or jogging, but it seems like something I would enjoy--or at least Caitlin's blog makes it seem like something tremendously enjoyable. I feel weird using her first name on my blog considering that I've been reading her blog religiously (ie: daily) for ages but never posted a comment (I didn't know where to start...she has like 100+ comments per day sometimes) so she doesn't even know I exist. It would be weird if I were a world-famous marathoner (ha!) and someone asked me who inspired me because my answer would be "Caitlin from Healthy Tipping Point" because Caitlin would probably be all "WHO?" Oh well. So yeah, I want to run. We'll see how it goes.

27th...Saturday
The rest of Saturday's eats included dinner:Parsnip "fries" with ketchup and scrambled eggs. The scrambled eggs were a very last minute addition because after eating a parsnip fry straight from the oven, my reaction was closer to wanting to throw up than wanting to eat them all like a cake from Dufflet. I realized that 5 small parsnips for dinner were not going to cut it so I decided to add a couple scrambled eggs to the mix and also added some ketchup in hopes of producing some kind of taste sensation akin to eating a slice of cake from Dufflet. (Apologies for all the Dufflet cake references but hopefully talking about eating the cake will stop me from actually eating all the cake. I've been eating WAY too much of the cake already--the scale told me so.) Dinner was eaten in the car--again--on the way to P-Mall so Sean and I could kill some time before watching Crazy Heart (starring Jeff "The Dude" Bridges). We ended up ordering noodle soup (mine with duck, his with BBQ pork) in the food court because that's what I do when I have time to kill. With our bellies full of liquid and hand-pulled noodles, we headed to Chapters to kill more time (and then bought books) and then finally watched Crazy Heart. Good movie but I prefer The Wrestler.

1st of March...Monday
Having spent the previous evening at Sean's catching up on the fifth season of Weeds (WTF is up with that show sometimes??), I came home late and did not prepare anything for lunch the night before. What resulted was a day full of "FML."

First breakfast wasn't so bad...a raisin bun that I toasted, split in half and spread with natural, organic PB and Crofter's Asia spread:But from there it kind of went all downhill because someone at work threw out or stole my dressing (the only dressing that was originally in my house that did not contain sulphites) and so I was left to eat this, plain:Iceberg lettuce with three small-size, hard-boiled eggs. Not cool! Seriously, not cool at all. Iceberg lettuce isn't even good with dressing but without dressing and with three measly small-sized eggs, ughhh! I wanted to eat my arm!

I did have a container of these grapes handy but not realizing that someone had stolen my dressing from the work fridge, I ate them during second breakfast! So along with my sad, sad, the-saddest-salad-in-the-world, I ate a piece of birthday cake:And thank goodness for that piece of cake, because otherwise, I probably would have eaten a sample at work and who knows what kind of bacteria it would have contained!!

I met my dad at the soccer dome after work. I normally wait about 25 minutes for him but I didn't want to sit around the lunchroom thinking about how hungry I was so I decided to walk to the soccer dome instead. As soon as I reached home, I ate the following macarons from Nadege:The yellow one is salted caramel and the light green is olive oil. Dinner consisted of the previous night's leftovers with rice:Steamed chicken, stuffed mushrooms, steamed preserved pork sausage, stir-fried veggies. It was a lot of food but I finished it all because I was REALLY hungry!

2nd...Tuesday
I woke up this morning not wanting another banana or bowl of oatmeal. I was craving eggs and bread and decided to really "do it up" for breakfast so I had the following for first AND second breakfast:Two small fried eggs on a whole wheat bagel with processed cheese and spinach. With first breakfast I had the remainder of my chocolate milk (a little less than 1 cup) and for second breakfast I had some water. It was super delicious and satisfying and it made my co-workers jealous...not that that's what I was going for but they were sad when comparing their yogurt and chocolate chip cookies to my breakfast bagel.

Lunch was also spectacular and featured a proper salad:Spinach with two maple breakfast sausages and goat cheese as well as a baked potato with crumbed feta, olive oil, salt and pepper:I didn't use any dressing on the salad as the goat cheese and sausage were flavourful enough. I often prefer my salads without dressing, as long as the additions to the salad have enough flavour to hold everything together...plus, I didn't use Iceberg lettuce this time.

Grapes and some dried dates rounded everything out though I didn't finish those all. Although I was a little bit full from my banana after work, mushrooms couldn't keep me away from dinner so I dug into a huge plate full of mushrooms. I'm kind of a mushroom addict...of the non-illegal variety. I absolutely love mushrooms, all of them. Straw, shitake, button, porcini, brown, oyster, king...mmm, delicious! The only mushroom I don't really care for is the enoki mushroom. I really dislike the stringy texture once it's cooked. It kind of grosses me out in the mouth. Anyway, my love of mushrooms resulted in this plate of mushroom and rice (with other stuff) goodness:
I am now in the process of making some buckwheat "cereal" so that I can have something other than oatmeal for second breakfast at work tomorrow. I still want something with enough soluble fiber to keep me satiated for four hours but I'm really tired of oatmeal considering that I actually really dislike oatmeal to begin with. Plus, I ran out of the oat and flax variety that I preferred and am now stuck with flavours like cinnamon spice and apple 'n cinnamon, the latter of which contains little chunks of freeze-dried apple and it grosses me out too.

HOME, SWEET HOME (aka Mega Pic-heavy)

The cats have missed me. Chewy, in particular--although that might just be because he seeks attention like crazy. He likes it when you hold him like a baby. Seriously.

I spent the weekend away from home--hence, the lack of updates. Here's a quick recap of the weekend's eats. It was a bunch of unhealthy and random stuff.

Friday the 5th (Sean's half-birthday):
First breakfast was a PB& blueberry jam sandwich on Honey 'n Oat bread:I actually have a photo of my first breakfast--hurrah! 100% of the time I'm eating first breakfast in the car so I don't end up taking a photo of it. Friday was different though--I was jazzed about the weekend and apparently that meant having enough time to snap a pic of my sandwich pre-jamming-it-together. I wish I had not used the flash mode though. Second breakfast a little more than an hour later was organic cinnamon spice instant oatmeal with strawberries, dried pineapple bits and chia seeds. No photo. For some reason the addition of chia seeds is still not enough to satiate me until lunchtime at 2:30. I don't know whether it's actually impossible to eat oatmeal and be full until four hours later but I'm still working on it.

I was starving and just about ready to gnaw my arm off by the time lunch rolled around. Lunch was a three-parter. Part one: whole wheat pita pizzas...
Top: zucchini, mushrooms, tomatoes and feta / Bottom: pear and feta. Yes, these are the leftovers from Thursday.

Part two: salad of romaine lettuce, mini carrots, radish slices, strawberries...If you think this salad looks eerily similar to the one the day before, you'd be correct. Since Thursday was such a crapshoot, I kept my lunch and ate it on Friday. So along with the salad I had the sweet potato balls as well (although I did manage to eat a couple of them yesterday)...I was talking on the phone with Sean during my 30-minute lunch so if you were watching me eat my lunch that day, it wouldn't have been pretty. Me + hungry + only 30 minutes to eat = ugly!

The rest of the afternoon was spent waiting for the workday to end so Sean could pick me up and so we could head out to have dinner with some friends. While in the car, on the way to Janice's new apartment, I ate a pear and then while walking to her apartment I ate these:
Yes, all four (shot taken the next day) and then while at her apartment, I ate a banana and had some pineapple juice.

Then we finally headed to the restaurant, Memphis Smokehouse where I had the Memphis Smoked Nachos: tortilla chips with green/red peppers, tomato, jalapenos, pulled pork and BBQ sauce. It was okay...probably not worth the $12 it cost but it was the least offending thing on the menu. Note to self: when you plan on ordering salad at a restaurant, do not eat salad for lunch.

Friday night was more about the company than the food so I'm glad that Sean and I went out instead of staying indoors. I had planned on making Sean dinner for his half-birthday that night but we postponed things to the next day.

Saturday, the 6th: (Note: It's now past 11 and I'm starting to get sleepy and my throat is hurting so the rest of this might be shorter than Friday's recap)

Breakfast was kind of embarrassing but Sean made key lime pie and this was my first chance to try some, ever:Sean's dad kind of overdid on the meringue but overwise it was awezome! (I'm leaving in the spelling error.) It was just the right amount of tart. Mmm...I love limes! Of course, I never even knew what key limes looked like so when I saw his second bag of limes sitting on the counter, I had to take a pic:And here's some cut-up, leftover from his first bag:I know this photo doesn't give you a really good idea of how small key limes are but they are TINY! I never knew that. After that Sean and I went out for some real food, Thai at a local restaurant where we had a couple offerings from the lunch specials: spicy beef and veggies on rice for me and Belachan fried rice for Sean. For about $8 you get soup, a veggie spring roll, a "main" plus a drink (tea/pop). The main portions were huge (despite my eyes thinking otherwise) so we packed the leftovers to go. Sorry, no photos as I completely forgot. The restaurant serves really great tea though--Stassen jasmine tea or something like that. I must find it.

Once back at Sean's, I decided to stream the first episode of Dexter from the fourth season for him to watch even though I know he hates watching TV shows like this; I was just too excited to have him wait to watch it on DVD. Who knows how long that'll take!? While re-watching the episode, I ate the rest of my lunch (hey, it was two hours later!), this orange:and some of this crack, err...kettlecorn:They might as well advertise that stuff as crack though. I refilled my soup bowl three times and eventually had to get Sean to hide the bag from me--even though I managed to reach the top of the fridge twice in order to get more! That particular brand of kettlecorn (I'll take a pic of the bag next time) draws me in like crazy!

While Sean walked his dog (Heidi, a German Sheppard), I began to prepare dinner. First up was Martha's cucumber mint soup. I kind of fudged on the recipe ingredients when Sean and I were at the grocery store and instead of going with the usual recipe (bookmarked on my laptop), I used Senor Flippy Flip* to Google one while at the grocery store. So while we used this recipe, I really had wanted to use this one. It's not too different except that the addition of garlic (even just two whole cloves) was mega strong! Anyhoo, the soup looked pretty and Sean really liked it:Next on the menu was Chicken Kiev but since I had no clue what chicken Kiev was and therefore had never made it before, I enlisted Sean's help and he arrived back with Heidi, just in time. So we loosely based our recipe on this recipe from AllRecipes.com. The first difference is that instead of frying our chicken, we baked it at 375F for 25 minutes. I also improvised on the herbs used since Sean and I picked up fresh herbs from the grocery store instead of dried. For the pat of butter inside the chicken, I used approximately the following for two large-ish chicken breasts (yay free-range!)
- 2 Tbsp. margarine
- 1.5 tsps minced garlic/jalapeno stuff in a jar
- 3 cloves of garlic, finely chopped
- a bunch of fresh dill, finely chopped
And I think that's it. The darn thing didn't firm up in the freezer because of my use of fresh ingredients but I smeared it on the chicken and rolled everything up anyway. Then we dredged it in flour (with salt, pepper), egg and then breadcrumbs. Here it is pre-oven:Notice our two chicken fingers at the very top. Basically Sean dredged the chicken fingers in the same flour, salt and pepper/egg/breadcrumb mixture as the chicken Kiev. 18 minutes later and those fingers were cooked to perfection: They were super tasty and tender! I love free-range chicken. I got the bigger chicken finger because Sean was having the bigger portion of chicken Kiev but I wasn't sad at all.

About 17 minutes after that, our chicken Kiev was done too and then our roasted broccoli shortly after that...For those of you interested, we roasted the broccoli at 425F for about 20 minutes though it could have used a few minutes less. Dinner was absolutely fabulous. It was flavourful without being too rich and heavy and the roasted broccoli was super addictive.

The rest of Saturday evening was spent trying to locate Glee at Blockbuster (with no luck) so we settled on Revolutionary Road, which was good but now I think I'll actually read the book. And is it just me or does Leonardio DiCaprio not age at all? And I really hate Kate Winslet with fake blonde hair. Ew. And why does Kathy Bates kind of look like my grandmother even though she's not Asian? Bizarre! A couple bowls of kettlecorn were probably consumed but I'll spare you another porn shot of it.

Sunday the 7th (aka SuperBowl Sunday!)

Breakfast was a mish-mash of what was around Sean's house. When I tell you that his fridge has no food, I ain't kidding. Check out the evidence:
First row: milk, yogurt
Second row: margarine, yogurt
Third row: suspect chicken breast, bread, olives, rice pudding, Gatorade (for something involving a virtual colonoscopy?)
Fourth row: Key Lime pie, mini carrots, sweet potato balls (last two things are my contribution)
Drawer: eggs, random meat stuff (I think it was sausages?)
Fifth: alcohol
Last: more olives(?!?!), peppers in a bag (seriously, who is crazy enough to buy pre-packaged peppers? They are ridiculously expensive!), romaine hearts in a bag (see note for peppers)

For those of you who think I'm being overly harsh, bite your tongue! Sean complains about the lack of food in his fridge too. It all stems from the fact that his mother hates to cook and since she's the one doing the cooking most of the time (unless it involves the BBQ), the food in the fridge is almost always lacking. The photo you see above actually makes Sean's fridge look pretty full. A couple weeks back all I could see was milk, yogurt, margarine, bread and olives.

Anyway, breakfast was a three-parter: small bowl of Honey Nut Cheerios with skim milk, a mini vanilla cupcake with too much frosting and finally a bowl of leftover cucumber mint soup with a slice of toasted whole wheat bread:

Sean and I sat around the kitchen table for a while. He ate a honey tangerine as such and I just had to take a pic:After a quick trip to the grocery store for a certain kind of bacon I just HAD to try, Sean whipped me up this real breakfast/lunch feast:Look at all those condiments! There's ketchup, two different kinds of jam, maple syrup, salt, pepper and my big mug of tea. But onto the main event...the food! Here's a close-up:A slice of whole wheat toast with butter, homemade home fries, two eggs sunnyside up and three slices of that British-style bacon. It really was worth the quick trip to the grocery store. The bacon didn't even require the maple syrup but I used some anyway. And I must have been really hungry or Sean must be a really good cook because I ate EVERYTHING! Normally when Sean and I eat at diners, I can never manage to finish the second egg or all the toast or some part of the meal. This was just delicious though.

Later in the afternoon Sean and I both fell asleep and the only reason Sean woke up is because Heidi woke him up to be fed. After that Sean woke me up and we headed to Jessie's house for a small Super Bowl get-together. Here was the spread, which was way too much food for only four people!Note that some of it had already been taken before I remember to take a pic. Anyway, from clockwise starting at the top-ish: cheese puffs (homemade by Jessie); Garden Fresh Gourmet salsa and blue corn chips; mini carrots; all-natural malt vinegar and salt chips; cranberry goat cheese log and crackers; and finally, beef sausage slices, cheese and crackers. Here was first plate of food:I went back for more cheese puffs, carrot sticks, salsa and chips. Everyone also got to snack on these delicious looking chicken wings:which is why I went back for more of the other stuff. And then later on during the game, I think sometime after the halftime show with The Who, we all had a couple slices of pizza (pepperoni, red peppers and feta cheese). There was also some kettlecorn consumed and three cans of pop. Eeps, what an unhealthy day overall! The carrots and whole wheat bread were just about the only healthy thing about Sunday. Oh well! I ate a whole bunch of food and came home and weighed myself and guess what, between Friday and Morning morning, I hadn't gained or lost a pound. Good times, metabolism!

And oh yeah, the Saints won but I don't really give a big whoop about football so I don't care.
